Walk-in cooler
and smoker are installed and inspected. We had our
pre-opening health department inspection today. Few
minor plumbing corrections need with re-inspection on
Monday. Final fire inspection passed. The plan
is to open on Tuesday February 10th. Hours will be
11am to 8pm, closed Mondays and Holidays.

The economy
must be good, it took us four refrigeration
contractors to find one willing to do the job in a timely
manner. The city did a great job in quickly approving
the final two permits for installing our walk-in cooler and
big outdoor smoker. Work is scheduled week of
January 26th (Teddy Bear's Birthday.) Then we need county and
city sign off. We open the day after we get the final
approvals. Hopefully we will be open by the first
week of February, right now we are on track.

We are
finishing up a few details. Then we need county and
city sign off. Hopefully we will be open by the first
week of February.

Keep the faith we are making progress. We are getting
close! See details below. The tenant improvements and
equipment suggested by SnoHo health has resulted in more
capacity than originally planned. We see this a a great
thing in the long run. Even though the days we have been
vending have been spotty due to weather and our other
commitments, response has been very good. Our plan is
approvals permitting to get all work done in December and
open in January. Have no fears - the bad news on the TV is
not reflected in our sales, which are up month over month
from 2007. October and November were up over 30% compared
to 2007. Konrad and Phyllis will be focusing on Monroe
while a new owner operator will be insuring that the quality
remains in Duvall with the exact same menu. We could
not start improvements in Monroe until we had provisional
approval from SnoHo health.
Refrigeration
SnoHo health required us to to have over 5 times (Cubic
Feet) the refrigeration than was required to open
Duvall. We bought a two year old walk-in at a Quizno's
auction for a song. To that we have added a new
three door reach-in, our 2 year old 3 door under counter
and a beautiful Coke cooler we found on eBay.
Electrical
We only needed two new 20 amp circuits for the walk-in and
smoker. IES did the work and WA LNI inspected it.
Cooking
We are putting one of our monster Ole-Hickory smokers
outside for the genuine Cherry smoked experience our Duvall
customers have come to love. G&S will be running the gas
for us. IES has the electrical done. Ray Morris will be
providing our Cherry wood. The concrete slab that the
walk-in and smoker sit on needed repair and that is
completed thanks to Quick and Easy Concrete.
Plumbing
The outdoor cooker requires an outdoor hand wash sink. We
picked up one at the same Quizno's auction where we got our
walk-in. SnoHo health required a new second prep sink. We
purchased that and Hudy has a permit in with the city to do
the installations.
Tech Stuff
The 42" 1080P FullHD TV is up in the main dining room with
Comcast hooked up. Comcast Cable, Internet and Phone are
installed. Secure and Public WiFi are up and running.
Second Big Screen for the party/class room will be installed
before we open. We're waiting on the after Christmas sales
to get that. We purchased an even bigger monitor than our
Duvall Menu monitor on Black Friday.
BBQ Classes
We will be using our party room for classes.
Final inspections from the city and SnoHo health and we
can open. We hope that's January.
